Baby Octopus & Chorizo Stew

Monday night’s fabulous dinner, under a sky filled with ligtning and fat spring raindrops. Whole baby octopi stewed in white wine and olive oil with fennel and mirepoix.

Then, the mirepoix is fished out and green olives were added. The dish was finished with lemon zest and juice and lots of chopped continental parsley. Winner.
